- 200g mature cheddar cheese, grated
- 100g cream cheese
- 2 large onions, finely chopped
- 2 tablespoons butter
- 1 large egg, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Sauté the onions in melted butter over medium heat until soft and translucent, about 5-7 minutes.
- Mix the mature cheddar, cream cheese, and cooked onions in a bowl; season with salt and pepper.
- Prepare the puff pastry by rolling it out and lining a pie dish with half of it.
- Fill the pastry base with the cheesy onion mixture, spreading it evenly.
- Seal the pie by covering it with the remaining pastry and sealing the edges.
- Brush the top with beaten egg for a golden finish.
- Bake for 30-35 minutes until golden brown and bubbling.
- Cool slightly before slicing and serving.
